Savoury vinegar

575 ml Bajoriškių spirit vinegar

25 g black pepper

25 g ginger root

25 g salt

7 g allspice

25 g finely chopped spring onions

2 crushed garlic cloves

2 bay leaves

Method of preparation:

Grind the black pepper and mix with other ingredients in a wide-necked jar. Keep covered for a week. Place the opened jar in a pan of boiling water and cook over a low heat for 1 hour. When cool, seal tightly and store in the pantry. Use this vinegar to flavour salads and to marinate meats. Bon appetite!
